Rural Kitchen Design: A Case Study

Kitchen is the heart of a house. Since major part of time is spent in kitchen compared to other areas in the house, it needs to be designed with utmost care. Attention needs to be paid to the type of kitchen, work areas in kitchen i.e., preparation area, sink and cooking area. Storage facilities, openings and ventilation must be adequate so that home maker can do cooking with less strain. With this background, the present study has been conducted through case study method to evaluate the kitchen design in rural areas. The study was conducted in Dabliguda, Maheswaram Mandal in Telangana state. Observations were made in 10 kitchens to understand the existing kitchen conditions. It was found that all the kitchens were placed in the right direction i.e., east. Women spent their most of the time in the kitchen. Their work efficiency, cooking quality and the stress on women is more important in the kitchen. All these will be going to affect by physical condition of the kitchen. Compare to bedroom, kitchen rooms, need proper planning of lighting but unfortunately due importance not given to the kitchen. A study was conducted in village area to affect the physical condition of the rural kitchen on the house wives of rural area while carrying out kitchen activities. The study indicated that there is a need to create awareness and educate housewives about the necessity of good physical condition for carrying out cooking activities with ease and comfort and also to impress upon them the unnecessary strain that they under go due to poor physical condition of kitchen. The present study was undertaken to study the work, worker, and workplace interfacing in the selected standing type of kitchens in Behbalpur village of Hisar district. The study was conducted on 50 women respondents from the age group of 24-47 years who were involved in kitchen activities for the last 2 years with at least 2 hrs daily. No separate counter was found for preparation, cooking, and washing activities. Only one work counter was found for all purposes with height and depth of x = 94.2 ± 4.44 cm x = 61.8 ± 7.8 cm, respectively. It can be concluded that the height of the counter was not adequate and was either too high (20.0%) or too low (38.0%) in more than fifty percent of the kitchens. Regarding the depth of counter surface, the mean value of counter depth was (x = 61.8±7.8 cm) significantly higher than the usual horizontal reach of women (x = 47.6 ± 5.9 cm). In all three groups, p values were less than 0.005 (5.82E-09, 2.3E-17, and 3.44E-10), representing the significant difference in means of each group, i.e., between counter height and standing elbow height, and between counter depth and horizontal reach(s). The increase in population led to the narrowness of the land mainly for housing and settlement needs. Therefore the presence of housing and settlements vertically is one of the alternative solutions in solving this problem, one of which is the apartment project targeting low income citizen (MBR). But in fact in most cases in big cities, precisely due to the narrow residential area, many cause new problems such as narrow space and also the function of space so that space becomes ineffective and inefficient. This research was conducted with the aim to examine the effectiveness and efficiency of kitchen space as one of the space facilities that support family needs in food in simple flat unit with a case study of Rusunawa Manis Jaya, Tangerang City. The method used in this research is comparing the condition of existing kitchen space in flat units in Rusunawa Manis Jaya with the parameters about the effectiveness and efficiency of the kitchen space by using the kitchen triangle concept issued by the National Kitchen and Bath Association with the aim of producing a recommendation that can be used by managers, designers and users in designing the kitchen to support users in terms of effectiveness and efficiency of kitchen activities in the kitchen itself. From the results of the research on the effectiveness and efficiency of the kitchen space based on the kitchen triangle concept, it can be concluded that the kitchen space in the Rusunawa Manis Jaya unit has met the standard from the space requirements, but has not fully met all these parameters issued by National Kitchen and Bath Association so that the effectiveness and efficiency of the kitchen space in the flat unit in Rusunawa Manis Jaya is still not compatible with the parameters.

Kitchen is the most important place of a house where homemakers spend most of their time working in. Often the things that dissatisfy one about a kitchen are the things that could have been avoided by developing a plan to meet the needs of the family. A well designed kitchen can reduce the physiological strains faced by the homemakers during working in the kitchen. Modern kitchens are the best example for reducing the physiological strains as it makes the tasks easier and faster. Modern kitchen designs have revolutionized the kitchen décor all over the world. Depending upon the problems faced by the homemaker while working within the kitchen, certain renovations are needed. With the help of this data, guidelines can be formed for designing the modern kitchen. The modern kitchen designs and guidelines are proposed after knowing the problems faced by the homemakers while working in their modern kitchens. The findings of the study, the guidelines and the designed proposed for the modern kitchen would lead to the increment in the knowledge of the learners, interior designers and homemakers.

The place of kitchens in contemporary designs is quite different from the traditional designs in terms of location, aesthetics and furnishing. Residence carries cultural information through its structure and activity. The kitchen, an indispensable part of a residence is used to cook food and food is the presenter of a country's habit and nature. This study is an attempt to investigate the transformation of the spatial organization of kitchen area considering Dhaka, Bangladesh residences. The study is based on primary data collected from different types of apartments in Dhaka City. Thirty households were surveyed using a structured questionnaire to investigate the kitchen activities, workable space, comfort while working in the kitchen. The study has institute that once upon a time, kitchen was useful for different activities and it was given equal importance while designing the living rooms or bedrooms. But slowly kitchen has become one of the most hazardous space in a residence, in the context of Dhaka and the situation are getting worse. The outcome of the study is expected to raise awareness on setting, design of kitchen area appropriately among architects & planners.

Improved cook stove (ICS) indicates improved form of traditional cook stove. It is more effective, efficient and safer to use. ICS is popular in rural villages of Nepal as a new innovation of clean cooking mechanism. To explore the end users views about the prominence of ICS in rural settings of urban areas, this study is conducted as the title of prominence of improved cook stove in rural areas: end-users perspectives. It is based on the theoretical assumption of cultural feminism. It employs exploratory research design and is based on both primary and secondary sources of data. The study revealed that there is high prominence of ICS in rural farm based society in Nepal. Women are endusers of ICS. It is the space commonly disregarded and has been a cause for many other issues relating to health, safety, and cleanliness. This paper describes broader research undertaken for a master's degree in product and space design at IADE, Universidade Europeia, Lisbon, Portugal. It aims to define guidelines for the development of domestic kitchen projects that contribute to reducing food waste. After this research, our goal is to further develop its outcomes through future research and the implementation of the resulting guidelines in a lifesize field experiment. We departed with the hypothesis that space design may influence users' behaviour; therefore, it can be used as an active tool in favour of sustainability. We defined a methodology that informed a review of the literature, case studies and surveys. We analysed comprehensive themes regarding the problem, which enabled a holistic approach to the issue. We conclude this paper by showing the pertinence of our research proposal, a novel way of combining specific strategies from three primary areas of knowledge (design for behavioural change, food waste and interior design) to achieve our goals of reducing food waste in domestic kitchens and contributing in this way to a more sustainable society.
